	<description>
Lots of low carb food examples
With all the interest in low carb food, there have also been a lot of questions about the diet that have been more closely looked at recently. The low carb food craze caught on so well and so quickly that relatively little was known about the effects of the diet. As a result, many studies have been done that have attempted to answer many of the diet's questions.

One of the doubts many people had about low carb food was whether or not people on the diet were getting enough vitamins and minerals. In response to all the concern, the USDA Food and Nutrition Database has put together a list of many types of low carb food that are also rich in antioxidants.

Antioxidants in low carb food

  Anthocyanins: eggplant, grapes, berries
  Allium sulphur compounds: leeks, onions, garlic
  Beta-carotene: pumpkin, mangoes, apricots, carrots, spinach, parsley
  Catechins: tea, red wine
  Copper: seafood, lean meat, milk, nuts
  Cryptoxanthins: red capsicum, pumpkin, mangoes
  Flavinoids: tea, green tea, citrus fruits, red wine, onion, apples

As you can see there are many options when it comes to low carb food that can help you stay true to your diet while still getting the vitamins and minerals that you need to stay healthy while you lose the weight. The more you know about the diet that you are on, the more chance you have for success. And remember that even though it is best to shed excess weight, it is definitely not a good idea to do so at the cost of your health!
