	<title>Chocolate Types</title>

There are so many different chocolate types out there in the wide, wide world of chocolate that it's hard to know what's what. The most basic chocolate types are milk chocolate, dark chocolate and white chocolate. Below, we'll tell you the differences:

Milk Chocolate
This type of chocolate was first developed by the Swiss. It is made of 10% chocolate liquor, 12% milk solids and 3.7% milk fats. It also has cocoa butter, vanilla and lecithin. Higher quality milk chocolate usually has a higher percentage of cocoa liquor, but milk chocolate overall has less cocoa liquor than dark chocolate, so the chocolate flavor is less pronounced. Make sure your milk chocolate has pure, natural ingredients--nothing artificial. Milk chocolate is one of the most common chocolate types used in candy (in particular, candy bars) but is also used in desserts. Because of the high sugar content, it is very heat sensitive. In general, you shouldn't use milk chocolate in a recipe that calls for other chocolate types. The one exception is using milk chocolate chips in place of semisweet chocolate chips when baking chocolate chip cookies.

Dark Chocolate
Dark chocolate is made of chocolate liquor, sugar, cocoa butter and vanilla, and it actually has health benefits. It can lower blood pressure and it's good for your heart! This is because the flavonoids in cocoa and chocolate can lower your risk of heart disease. (Flavonoids lower your "bad" cholesterol.) Dark chocolate has the most flavonoids, which is why it's the best kind for your heart.

White Chocolate
The least well-known of all chocolate types is white chocolate. White chocolate is not made with chocolate liquor. Instead, it gets its chocolate flavor from cocoa butter. In fact, it is made of cocoa butter, milk solids, sugar and vanilla. You might notice there are no cocoa solids. Because of that, the FDA doesn't consider white chocolate to be actual chocolate.
